Crab Farci: Stuffed Crab Baked in Its Shell (Crabes Farcis)

Crab farci is crab meat, fine strips of carrot and potato, and milk-softened bread packed into the shell and baked until browned. Saint-Barth's tourism introduction names crabes farcis among the island's Caribbean dishes. This guide follows one French-language recipe and covers choosing crab, shelling it, checking doneness with a thermometer, and handling the raw egg yolk safely.
